Nothing could be easier to ferment than a jar of preserved lemons. There are only two ingredients needed: lemons and salt. There are many different "recipes" for making preserved lemons but I am still using the first one I found. It is from a blogger who has an excellent how-to video. Preserved lemons get better with age and I usually leave mine in a cool place for about a month. I move them into the fridge at that point. They keep for a year in the fridge, if they last that long!
