Curtido

Curtido comes from the Spanish verb encurtir, which means "to pickle." The process for making curtido is the same as making basic sauerkraut. A few extra ingredients are added to give the final product a different flavor profile. I add carrots, onions, garlic, oregano, cumin and a few pepper flakes to spice things up. Think of it as a Southwestern Sauerkraut. Curtido is especially tasty with tacos and quesadillas.
