Despite the fact that my husband and I are not necessarily hot sauce lovers, I am determined to try my hand at creating hot sauce from my garden peppers. The two jars pictured at left represent round number two. My first attempt involved a pepper mash method. The peppers were blitzed in the food processor before starting the fermenting process. Unfortunately, the solids kept pushing their way above the brine and I had a moldy mess. Mr. Garbage Disposal took care of that round. Attempt number two uses chunks of peppers with a brine. I have a weight on  top of the peppers to keep the little buggers submerged. My plan is to ferment them for a few weeks and then take the next step of turning them into a sauce. Time will tell if I can add hot sauce to the success column. Stay tuned.
